Weight Loss Recipes - Southwestern Beef & Bean Burger Wraps



Hello there. Today I want to share the weight loss recipes from EatingWell Magazine called Southwestern Beef & Bean Burger Wraps. Well, kids and adults alike will love these quick, zippy burgers. The beans make the burgers a little fragile, so be careful when taking them off the broiler pan. Make it a meal: Serve a green salad and frozen mango slices for dessert.


Ingredients

  • 1 cup refried beans
  • 12 ounces 93%-lean ground beef
  • 1 lime, cut into 4 wedges
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon chopped pickled jalapenos
  • 1/2 cup shredded pepper Jack cheese
  • 1/2 cup prepared salsa
  • 1/8 teaspoon garlic powder
  • 4 whole-wheat tortillas, warmed (see Tip)
  • 2 cups shredded romaine lettuce
  • 1 avocado, peeled and pitted

Preparation

1. The rack in upper third of oven is positioned; preheat broiler. The broiler pan is coated with cooking spray.

2. The ground beef, beans, cilantro and jalapenos is gently combined in a medium bowl ( please do not overmix). Shape into four 5-by-2 inch oblong patties and place it on the well-prepared pan.

3.The patties is broiled until the temperature reads at 165°F/73.89 C  ,this takes time about 12 to 14 minutes and make sure to do it with smile on face.

4. Meanwhile, avocado with salsa and garlic powder is mashed together in a small bowl.

5. The tortillas is placed on a clean work surface. Each tortillas is spreaded with the guacamole, then sprinkled with lettuce and cheese . The final step is to top each with burger and roll it into a wrap. You can serve immediately with lime wedges 



Tips & Notes

Tip: To warm tortillas: Wrap in foil; bake at 300°F until steaming, about 5 minutes. Or wrap in barely damp paper towels and microwave on High for 30 to 45 seconds.
